potato croquettes

I made potato croquettes 2 weekends ago --one of my feel-good dishes, as I just based on my instincts (haha, I’m so anti-cookbooks coz ingredients there are hard to find within the home’s pantry) and because I cooked it, WITH LOVE. naks! hahaha! I was motivated by how he loved the croquettas we ordered in Una Mas and d’Mark’s.

I’ve always wanted to post the recipe somewhere, just for my future reference, but I didn’t have time to do so. Now here it is. Thank God for non-working holidays! Hehe Ü


Ingredients:
3 large sized potatoes
1/8 c evaporated milk
2 tbsp bacon bits
1 egg, battered
1 clove garlic, chopped
1 small red onion, chopped

Dash of the following:
Salt
White Pepper
Italian seasoning

Flour with salt and black pepper, as breading
or breading for fried chix sold in supermarkets


Boil the potatoes, then mash. Peel them if you want, though I didn’t peel mine. Fiber din un. hehee. Add the milk, egg, bacon bits, garlic, onion, salt, white pepper and Italian seasoning, then mash it more till evenly mixed. Roll into balls (about the size of a squid ball) then roll over the breading. Deep fry till they're golden brown. That’s it! Serve with mayo or ketchup as dips. I guess it’s better if you add cheese, and real meat like chicken or slab bacon in the mashed potato mix (I used the artificial bacon bits coz it’s what I found at home!) and next time I’ll probably take a picture of it... Ü
